Cranberry Bread, Cranberry Parfait & Cranberry Chocolate Smoothies
Cranberries are ubiquitous to both Thanksgiving and Christmas around here. Whether the cranberry sauce on your table has been made from scratch or with the assist of a can opener, the question remains the same.
What do you do with the leftovers?
This year, there’s options. Cranberry Parfaits with the kick of Better Than Coffee bars (which is also super easy to eat either at your desk or on your way to work), a Chocolate Cranberry Smoothie, or Cranberry Bread. Or all three. Whatever.
Cranberry Bread, a Childhood Tradition
Growing up, each Thanksgiving my mom, brother, and I would made loaves of Cranberry Bread to not only have around the house, but to give as gifts to friends and family.
Reading Cranberry Thanksgiving, as I stood in the kitchen with a cup of coffee in hand, brought back those memories
Whole Cranberry Bread
Ingredients
- 2 C AP Flour
- 1 C Sugar (I like turbinado)
- BIG Pinch Salt
- 1 1/2 t Baking Powder
- 1/2 t Baking Soda
- 1/4 C Butter Big fan of Kerrygold
- 1 Egg Whipped (use a fork)
- 2 t Grated Orange Peel
- 3/4 C OJ
- 3 C Mix of chopped and whole cranberries
Instructions
- First five ingredients into a mixing bowl, and stirred together.
- Cut in your butter until crumbly.
- Add the next three ingredients and stir till juuuuuuust combined.
- Fold in your cranberry’s.
- Grease a loaf pan, and fill with your dough.
- Bake for an hour and a half at 350º, which really means until a toothpick (or table knife, if you’re anything like me) comes out clean.
- Once your breads cooled slightly, slice it and slather it with butter.
Cranberry & Better Than Coffee Yogurt Parfaits
I am not a morning person. Not really.
When it comes to getting out of the house on time, looking presentable (sometimes questionably so), with everything that I need for the day packed and in hand, I can do it. What I’ve discovered I cannot do however, is all of the above ANNNNND have breakfast and coffee before I do so?? Not so much.
During the corporate era of my life, I discovered the amazingness that is breakfasts you can eat while driving, riding the train into the city, or at your desk as your computer kicks on and you’ve started wading through your emails. (Shout out to to the 5th and Salmon Crew)
These make-ahead parfaits are easy for us not so-much-of-a-morning-kind-of-folk, packed with all kinds of good for

Layer your favorite flavor of Greek yogurt, a mix of whole cranberries & Karen’s Natural Cranberries, and chunked up BTC bars.

I topped mine with dark chocolate shavings, because duh. Chocolate.
Chocolate Cranberry Smoothies
This one is even easier. Your blender (I like this one the best), chocolate protein powder, ice cubes, and a big ass handful of either Karens Naturals, or your choice of fresh/frozen berries.
