Fried Green Tomatoes

Ingredients

  • 2 Eggs
  • 1 C Heavy Cream
  • 3 C Canoal Oil (for frying)
  • 1 ish C Flour
  • 1/2 C Cornmeal
  • Big Pinch Salt
  • Big Pinch Cracked Black Pepper
  • Couple Shakes Garlic Powder
  • 4 Leaves Romaine Lettuce Washed & Patted Dry
  • 4 Slices Bread of Choice
  • 1/2 lb Bacon Cooked suuuuuper crispy
  • Mayo
  • Sriracha (or hot sauce of choice)
  • 1 Lime Juiced

Instructions

The Fried Greens

  • Crack the eggs into a small bowl. Add in the cream and whisk together. 
  • In another small bowl combine the flour, cornmeal, salt, pepper, and garlic powder.
  • Dredge the pieces of slices of green tomatoes one at a time in the flour mixture, shake off any excess (LIGHTLY shake them, as you don't want to negate the work you've just done) 
  • Dip the dredged slices into the egg and cream mixture, soaking thoroughly.
  • Dredge again in your flour mixture.
  • Once the oil is heated, fry dredged tomato slices for 2 minutes on each side. When done place the fried tomatoes in the oven on the wire rack, or, drain on paper towels, salting lightly.

The Sauce

  • Mix mayo, sriracha, and lime juice together in a small bowl. (see, easy)
